This 12-inch (approx. 30.5 cm) long, slightly curved blade fillet knife (12-in. Curved Fillet) is the ideal knife for breaking up and filleting larger fish as well as game. It is excellent for most saltwater and large freshwater fish, as well as various game species, and makes it incredibly easy to cut fish and game into manageable pieces. Thanks to the considerable length and slight curvature of the blade, clean cuts can be made by pulling all the way through. And this more generously designed knife is not only an excellent tool for processing freshly caught fish or home-killed game: many professional chefs also use it for meat processing in their own restaurant kitchens.

The razor-sharp blade is made of 420J2 stainless steel, a quite durable steel that has a very high corrosion resistance (a particularly important criterion for use in humid or wet environments) and can be easily resharpened. In addition, this steel has just the right amount of pliability to facilitate filleting, preserving the tender meat and its delicate flavor.

The handle, made of durable fiberglass-reinforced nylon, is overmolded with rubber and its surface is finished with Kershaw's exclusive K-Texture™. This texture (a repeating pattern of the letter K, as seen in Kershaw's company logo) provides the grip you need and an all-time secure grip, even when your hands are slippery.

For proper storage of this filleting knife with K-Texture™, a blade guard is included.
